Cuvée Jules reflects the forward-thinking of this winemaker, his tenacity to perfect the ageing process in the cellar, and to initiate other paths. This chardonnay blends 70% from Côte des Blancs and 30% from Sézannais. The dosage of 5 g/L establishes a balance between mineral and organoleptic floral and fruity nuances. The 30% aged in oak barrels instills a different density.
Nose
Under a rocky veil, the nose conveys a sense of maturity with notes of nectarine, quince, honey, and pastry hints, refreshed by the chalky sensation with touches of white mushroom, mint, and fern, with a slight note of citrus zest.
Mouth
The palate is velvety, clear, and enveloped, with a fine and woven perlage, possessing a certain density carried by juicy acidity. The flavors on the palate speak of citrus, lemon peel, and the finish lingers with chalky notes and fresh almonds, accompanied by a background of toast and zest. Pleasurable from now on, it has the potential to age for a decade.
